Poor Boy Crab Cakes

A couple days ago Shane helped me make Zucchini "Poor Boy" Crab Cakes. He was very proud of his creation and even stated that when he grew up he was going to be a Professional Chef just like his Mama.. I am FAR from being a Professional, but I am flattered my sweet boy thinks of me that way..

Poor Boy Zucchini "Crab" Cakes

1 1/2 C. Shredded Zucchini (Patted Dry)
1 C. Bread Crumbs
2 Tbs. Chopped Onion
2 Tbs. Flour
1 Tbs. Mayo
1 tsp. Old Bay Seasoning
2 Eggs (Slightly Beaten)
Seasoning Salt or Salt & Pepper to taste
Olive Oil for Frying

Combine all ingredients in a bowl. Heat 1/2 inch of Olive Oil for frying in a pan set to med/high heat and drop rounded spoonfuls of mixture into oil, press down to make a patty with the back side of the spoon-
fry until light brown and crisp.
Serve with Tarter Sauce or Favorite Dipping Sauce.

  1. He is so cute. This looks like a good receipe that I'll have to try. I watched Food Inc. (documentary) and we're going almost all organic, so we're trying to eat healthier. You are a GREAT cook, and your creations are infused with love. Remember that can of "love spice" your Mom had? :) ILY

  2. Good for you.. It's so important to know what you are putting into your body. You either pay for it now ($$) or you pay for it later (your health) I would rather pay for it now.. ;) I will have to get that documentary off of Netflix. Totally remember the can of "love spice" and acutally saw it a couple years back and wanted to buy it and never did.. ILY2
